Chocolate Almond Tofu Cake

This dessert is not only gluten free but dairy free too. But you won't feel like you are giving anything up. It's yummy.

This recipe makes an 8" cheesecake. 

 

Ingredients:.....................................................................

Crust
1 3/4 cups brown rice flour
1/4 cup cocoa powder
1/2 cup safflower oil
1/2 cup maple syrup

Mix together well and press into an oiled 8" spring form pan.

Filling
1 package plain firm Soyarie blok tofu
1/4 1 cup maple syrup
1/4 cup almond butter
Juice of one orange
1/3 cup arrowroot flour
1 tsp vanilla 1/2 tsp almond extract
Process above ingredients in a food processor, until smooth. Pour mixture onto the crust. Topping 1 tsp almond butter

Topping:
1 tsp almond butter
Grated rind of 1/2 an orange
3 tbsp cocoa powder
1 1/2- 2 tbsp maple syrup

Mix together until smooth.

  1. Pour mixture onto the crust.
  2. Topping should slide off a teaspoon easily. Use a teaspoon to drizzle the topping in lines or circles over the top of the filling.
  3. Drag a toothpick gently through the topping to create an interesting design. Bake at 350 for 30-35 minutes or until the filling feels slightly firm to th e touch.
  4. Cool completely before slicing and serving.
  5. 1 tsp lemon rind Directions Heat the apple juice and agar in a pot. 
  6. Cook until the agar is completely dissolved. Mix remaining ingredients together in a cup, stirring until well mixed.
  7. Add to boiling pot and cook for a minute to thicken.
  8. Allow to cool for a few minutes. Pour over baked tofu cheesecake and allow to cool (2-3 hours) until set.
