Soyarie Breakfast Scramble

454 gm (1 lb.) Soyarie regular plain firm blok tofu
½ cup red onion, finely chopped
1-2 cloves finely chopped fresh garlic
½ tsp dried oregano
1 cup sliced mushrooms
1 red pepper—diced
1 tablespoon olive oil
1 tablespoon parsley—chopped
Fresh ground black pepper

  1. Heat the oil over medium heat in a non-stick skillet.
  2. Saute the onion until it starts to soften then add the mushroom, pepper and oregano and continue to cook until pepper and onions are sof
  3. Rumble the tofu between your fingers into the pan. This will give you the scrambled egg texture so make the pieces as big or small as you lik.
  4. Fry the mixture until the tofu starts to turn golden.
 

*Add the parsley and black pepper to taste.
