Green Door Lemon Tofu Cheesecake

Crust
1 cup of large flake oats
1 cup of pecans
1 cup of barley flour Pinch of salt
1/4 tsp cinnamon
1/2 cup canola or corn oil 1/2 cup maple syrup

 

In a food processor grind oats for 1-2 minutes. Add pecans and grind until mixture resembles coarse breadcrumbs. Empty oats and pecans into a bo wl. Add barley flour, salt, and cinnamon. Mix well. Add oil and syrup and mi x with hands to make a soft dough. Press evenly into an oiled and floured 12-inch sp ring form pan or 9 x 13 baking dish. Bake at 350 deg. For 20 minutes. Filling 1 1/2 blocks (750 gm) of Soyarie silken tofu 1/2 cup almond butter 1/4 cup of lemon juice 2 tsp. lemon rind 1/3 cup apple juice 2 tbsp arrowroot 2 tsp vanilla 1/2 cup maple syrup Pinch of salt Directions Blend filling ingredients in food processor until smoot h. Pour into partially baked crust. Return to oven and bake for 30 more minutes. Glaze 1 cup apple juice 1 tbsp agar flakes 1 tbsp arrowroot 1 /4 cup lemon juice 1/4 cup maple syrup

  1. Heat the apple juice and agar in a pot. Cook until t he agar is completely dissolved. Mix remaining ingredients together in a cup, stirring til l well mixed. Add to boiling pot and cook for a minute to thicken. Allow to cool for a few mi nutes. Pour over baked tofu cheesecake and allow to cool (2-3 hours) until set
