Green Door Tofu Lasagna

This Recipe was given to us courtesy of The Green Door Restaurant in Ottawa 

 

Ingredients:.....................................................................

12 whole wheat lasagna noodles
2 packages of spinach, washed, cooked, drained and finely chopped
2 tbsp olive oil
1 cup diced onions
1 tsp rubbed basil
1 tsp oregano
1 tsp salt
2 cups thinly sliced mushrooms
2 cups thick tomato sauce (canned or homemade)
2 bloks plain firm Soyarie blok tofu (1kg) crushed
¼ cup tamari
1 cup grated cheddar cheese

 

Directions:.....................................................................

  1. Cook lasagna noodles in boiling water for 5 minutes, set aside.
  2. Cook spinach in 2 cups boiling water for 1-2 minutes, drain, chop, set aside.
  3. Crush tofu and mix with tamari, set aside.
  4. In a pot heat oil add onions, basil, oregano, and salt When onions are soft add mushrooms and cook for 10 minutes.
  5. Turn off heat add spinach and mix well.
  6. Drain through a colander and put aside.

Layer ingredients in lasagna pan as follows::.....................................................................
Tomato sauce (2/3/ cup)
Lasagna noodles (¼ noodles)
Tofu (1/2 batch)
Grated cheese (thin layer)
Noodles
Spinach mushroom mixture
Ricotta or Cottage Cheese
Cheddar Cheese (thin layer)

 

*Bake at 300 deg. For 45-60 minutes, until lightly browned.
