Pesto Dip

This dip can be served with raw veggies, crackers or on diag onal slices of baguette, brushed with olive oil and toasted for a new take on bruschetta.

2-3 cloves garlic
1 cup packed fresh basil leaves
½  package of Soyarie plain regular blok tofu ½ lb
3 tablespoons of grated parmesan cheese
3 tablespoons of walnuts
2 tablespoons of olive oil
½ tsp. salt, freshly ground pepper

Directions:.....................................................................
  1. In a food processor chop the garlic.
  2. Add the basil and ch op.
  3. Add the tofu and walnuts and blend until smooth.
  4. With processor running drizzle in the olive oil.
  5. Add the parmesan, salt and pepper and process until just blended.
