Cream of Pumpkin Soup

A great dairy and gluten free recipe. Soyarie silken tofu is ideal for smooth blending so this soup tastes rich and creamy. Makes 7 cups..

 

Ingredients:.....................................................................

1 large can of pureed pumpkin (unseasoned)
2 cups cubed potato
1 large onion - chopped
6 slices diced bacon (optional*)
3 cloves garlic - crushed
1 tsp paprika
1 teaspoon of mixed dried herbs like thyme and sage
3 cups of water (or stock)
½ packet silken tofu (about 250g)
Salt and pepper to taste
Parsley for garnish

 

Directions:.....................................................................

  1. In a large saucepan, saute potato, onion, bacon and garlic until lightly brown and softening
  2. Then add remaining ingredients except the tofu.
  3. Simmer slowly until all ingredients are soft, then add tofu and blend.
  4. Garnish bowls with parsley.
 

*For a vegan alternative omit the bacon and substitute 2 tablespoons of olive oil.
