Sweet Sea Vege Tofu & Shrimp Curry (like a Korma)

This is an elegant slightly sweet and savoury curry dish. It is much like a Korma curry with a spectacular blend of flavours and textures. 

 

Ingredients:.....................................................................

Sauce
¼ lb butter
1 large apple, peeled and diced 
1 medium onion, chopped
1 banana, diced
2 Tbsp mild curry powder
⅓ cup dry white wine
2 cups of low sodium chicken broth
2 tablespoons Thai fish sauce
⅓ cup of 18% cream.

Curry:.....................................................................
350 gm package of Soyarie Sea Vege tofu, cut into half inch cubes
340 gm package of medium raw shrimp, peeled and deveined
3 tablespoons clarified butter*
Cashews, coarsely chopped
Sliced banana for garnish

Directions:.....................................................................

  1. In a large frying pan, sauté the onion, banana, and apple for 3 minutes, sprinkle with the curry powder and cook for another minute.
  2. Add the broth, wine, and fish sauce. Boil gently for about 20 minutes or until the liquid reduces by half.
  3. Add the cream. Cool slightly then puree in a food processor. Set aside.
  4. Sauté the tofu in the butter until brown and slightly crisp on the outside.
  5. Remove and combine with sauce.
  6. Sauté the shrimp in the same pan, until just cooked.
  7. Return all ingredients to the pan.
  8. Add the cashews
 

*Serve with rice. Garnish plates with banana slices.
