Super Salad: Kale & Roasted Beet Salad

Packed with super foods, like quinoa, kale and beets, this salad can stand on its own as a complete meal or works as a side with a light entree.

 

Ingredients:.....................................................................

2 diced Soyarie pinto burgers (150 g)
1
½ cups quinoa, cooked
3 large roasted beets, chopped
½ of 1 bunch Kale, chopped (about 4 cups worth)
½ cups walnuts, chopped coarsely

 

Directions:.....................................................................

  1. Mix all of the above ingredients in a large bowl and add salad dressing.

Dressing:.....................................................................

  1. 2 tablespoons Dijon mustard
  2. ¼ cup red wine vinegar
  3. ¼ cup olive oil
  4. Freshly ground pepper and salt to taste
  5. Mix with above ingredients and allow to rest for ½ hour to blend flavours.
